Winter Salad


Every bite of this salad is so satisfying.  It is a festive, colourful, and delicious salad and everything is available in the winter which makes this my top winter salad.  It also makes a great solo meal or can double as a party dish when attending all those holiday celebrations.  If you attended one too many holiday parties, this is a light post-celebration meal.

Once all the parts of this salad are ready, simply assemble and serve.  You will need the following:

(1) Arugula

This is a peppery leaf and goes extremely well with salty and sweet. . . .both of which are found in this salad.

(2)  Roasted beets

Tender and sweet and said to be good for the blood.

(3)  Candied pecans

Adds some sweetness and crush to the salad.

(4)  Goat cheese

The salty and creamy addition for a bit of added flair.

(5)  Pomegranate

This tart fruit appears in many classical myths and beautifies the salad.

For the dressing, I use any citrus flavoured dressing from the store.  The citrus goes nicely.  If you want to make your own it is basically 1 part olive oil to 2 parts citrus juice.  Then season with a little salt.

There you have it.  The BEST winter salad.  Enjoy!

Winter Salad

1 beet, roasted

10-12 candied pecans

2 C arugula

60 g goat cheese, crumbled

1/4 pomegranate seeds

citrus dressing to taste


  1.  Arrange all ingredients on a plate and drizzle with dressing.
  2. Enjoy!
