One of the best things about the holidays is being at home, by the fireplace with a hot cup of cocoa. It is easy to get into a seasonal mood when you walk through pretty much any local grocery store. That is where I came across these and I was inspired to perk up my regular hot chocolate to a more minty one (one of my favourite combinations).
I used to make my cocoa on the stove top until I got my Vitamix. Both work great. If you make it in a pot, remember to stir frequently at medium temperature so the chocolate doesn’t stick and the milk doesn’t burn. Otherwise, this treat is easy.
If you have access to the mint chocolate wafers, great! If not, you can use plain white chocolate and add a few drops of mint extract to your liking. You will need 1 C of the chocolate wafers.
Add the chocolate to 3 cups of milk and 1 cup of water. From there, blend it in the Vitamix for 6 minutes. This will melt the chocolate and heat up your drink. If you want it hotter, simply blend for several more minutes. Blend an additional minute on low to remove some of the froth that has formed.
Because I enjoy a good dollop of whipped cream on top, visually it is too much white on white so I add 3 Tbsps of unsweetened cocoa powder so it looks more like chocolate.
I also like the look of some of the shaved wafers sprinkled on top.

Peppermint Hot Chocolate
3Tbsps unsweetened cocoa powder
1C mint chocolate wafers
whipped cream and chocolate shavings for garnish (optional)
- Put all ingredients into the Vitamix or a large pot.
- If using the Vitamix, blend on high for 6 minutes.
- Blend an additional minute on low and serve with toppings if you wish.
- If using a pot, stor consistently on medium heat until all the ingredients are blended and hot.
