This is one of my fast and easy recipes which I will be adding to my blog from time to time. They are quick and easy and will be subtitled “QUICK RECIPE”. In under 15 minutes you can have a healthy lunch prepared. Stir fry is the answer to many of my lunch prep woes. I like to alternate between this particular recipe and my kale and chickpea salad recipe. For this stir fry I use carrots, celery, green onions and baby corn. You can, however, personalize it with your own vegetables of choice including, but not limited to: mushrooms, peppers, and onions.
I like to use beef because I can leave it a bit undercooked so that when I reheat it, it doesn’t become dry. Chicken makes a nice option also. In a hot pan with sesame oil, I brown thin slices of beef and give them a quick stir before setting it aside. Make sure to season the beef with a bit of salt.
I then add a bit more sesame oil before tossing in all the vegetables I have prepared followed by 3 Tbsps of soy sauce. To help it along, I cover the pan with a lid and let the vegetables steam for about 5 minutes. Then, I season with some salt and pepper.
For the flavour profile, I like fresh garlic and ginger which I mince and add at the end. If I cook it with the food, it tends to lose the burst of flavour that I enjoy. The majority of the tastes come from the sesame oil and soy sauce used in the frying.
To soften the vegetables more, you can cover and cook for a few more minutes and you can add more soy sauce if you choose. Once the vegetables are the texture and flavour you enjoy, toss in the meat, garlic, and ginger, and your stir fry is complete.
As a garnish, you can add chives and toasted sesame seeds.
Basic Stir Fry
2 carrots (sliced)
2 celery stocks (sliced)
1 can baby corn
4 green onion (sliced)
6 oz. beef (sliced thin)
3 Tbsps sesame oil
3 Tbsps soy sauce
2 garlic cloves (minced)
1″ piece ginger (minced)
1 Tbsps toasted sesame seeds (optional)
salt and pepper
1. Heat 1 Tbsp sesame oil in a large pan.
2. Toss beef until browned.
3. Remove beef and set aside.
4. Add remaining sesame oil and vegetables to the pan.
5. Cover and let cook on medium heat for 5 minutes.
6. Add soy sauce and stir.
7. Add beef, garlic, and ginger.
8. Stir for a few minutes until combined.
9. Sprinkle with sesaem seeds and serve.
