My mom is a self-taught cook. She came to Canada with a French cook book and taught herself in her early 20’s. She loves to cook as much as I do so when I talked to her about how I am trying to eat healthier, she served this salad one night at dinner. In other words, this is from my Mom’s table to yours. I eat it all the time now.
All this salad consists of is 2 oranges and an avocado. Quarter an avocado and remove the peel before slicing. With the oranges, simple peel it and remove the pieces which you then cut down the centre. The second orange is squeezed to use in the dressing.
The dressing uses the juice of 1 orange, 1 Tbsp grainy Dijon mustard, 4 Tbsp olive oil, 2 Tbsp balsamic vinegar, salt and pepper. This does make too much dressing for this one salad but the dressing will keep so I use it for other salads later in the week.
Once you have arranged the orange and avocado slices, pour some of the dressing on to let it soak.
Avocado Orange Salad
1 ripe avocado
1 orange sliced
1 orange, juiced
4 Tbsps olive oil
1 Tbsp grainy Dijon mustard
2 Tbsp balsamic vinegar
salt and pepper
1. Arrange the slices of avocado and orange on a platter.
2. Combine dressing ingredients in a bowl.
3. Pour some of the dressing over the salad.
