Parmesan Roasted Cauliflower

One of my struggles when I cook is trying to come up with a good side dish.  The trick is to find one that is easy enough to repeat and delicious enough to be worthy.  Enter cauliflower.  I am a big fan of this vegetable and over the years it has really gained in popularity.  Myself, I have made pizza crusts, mashed cauliflower, and cauliflower rice amongt other things.

Breaking down a cauliflower is easy  but what if you didn’t have to?  A whole, roasted cauliflower makes a beautiful dish that can be served family style.

The prep is very simple.  Separate any extra leaves from the cauliflower and give it a quick wash.

Once it is ready, prepare the rub which consists of 1 tsp of thyme, 2 cloves of crushed garlic, and 1/4 C of grated parmesan.  Slowly add about 3 Tbsp of olive oil to create a paste.  Use this to rub over the top of the cauliflower.

Place is in a dutch oven and cover.  Bake at 450º for an hour.  Place on a serving dish alone or with other roasted vegetables for a perfect side dish.

Ingredients

1 whole medium cauliflower (washed and prepared)

3 Tbsps olive oil

1/4 C grated parmesan

2 minced garlic cloves

1 tsp dried thyme

Directions

1.  Combine thyme, garlic, parmesan, and olive oil to make a paste.

2. Rub mixture over the outside of cauliflower.

3.  Place whole cauliflower in a dutch oven with the lid on.

4.  Bake at 450º for an hour.
