For those wanting to incorporate more healthy fats into their diet, this may be the solution.  Not only is this a light salsa that can be added to a variety of dishes, but it is also a stand alone food meaning you can eat it like a salad if you chose to.

The best part is it takes minutes to assemble.  Simply chop onion, avocado and tomatoes (I love the colour of heirloom tomatoes) into chunky pieces according to your size preference.  Squeeze 1/2 a lemon, drizzle a few tablespoons of olive oil and add several pinches of salt and 1-2 pinches of black pepper to the mix.  Toss and you are done.

Some other additions that work great include: fresh garlic, jalapeño pepper, parsley, cilantro, Worcestershire sauce, Tabasco, and/or even a little ground cumin.

This particular batch didn’t make it past a bag nacho chips but it tastes amazing on an omelet, on meat like steak or chicken, with grilled cheese, or try adding some chopped, cooked prawns to the mix!  Delicious!

Ingredients

1 ripe avocado, diced coarsly

4 tomatoes, siced coarsly

1/4 small onion, diced finely

1 lemon or lime

2-3 Tbsps olive oil

salt and pepper

Directions

1.  Combine ingredients

2.  Stir and serve.
