If you are intimidated by poaching just follow these easy steps:

1.  Place two 4 oz chicken breasts in a pot.

2.  Cover with cold water (you can add spices and flavour to water if you wish.)

3.  Bring to a boil.

4.  Cover, reduce heat, and simmer for 15 minutes.

5.  After 15 minutes, turn off the heat and leave the pot on the element for another 15 minutes.

Once the time is up your chicken is done.  When it is cool enough to handle, cut it up into bite-sized pieces.  Use the chicken in chicken pot pie or wraps.  Sprinkle chicken on salads or for enchiladas.  The uses are endless!
