Buffalo Meatballs

This isn’t my usual blog post as it will be short and sweet but I wanted to share a tasty creation that falls under my fitness goals.  It is low fat and high protein, perfect for workout days.  You can eat these meatballs plain, or toss them in a tomato sauce, or throw them over your favourite pasta!

Regardless, they make a quick meal so here we go.  Combine 2 eggs, 1 C of panko bread crumbs, 1 Tbsp of olive oil, a couple pinches of black pepper, oregano, about 1/2 C of finely diced, dried (or fresh) chorizo sausage, 1/4 C of diced red onion, and 1 lb of ground buffalo.  You may use beef but buffalo is very lean and tastes great.

When combining, it is best to get in there with your hands.  It feels weird but it is the best way to mix things up.

Once your mixture is complete, form even-shaped meatballs so they cook evenly (I use a cookie scoop to help with portion size).  The recipe will make approximately 20 meatballs.  When the meatballs are ready, bake at 425º for 15 minutes.

Buffalo Meatballs

Ingredients

1 pound ground buffalo meat

1/2 C panic bread crumbs

5 inch piece chorizo (finely diced)

2 eggs

1/4 C  red onion (finely diced)

1 Tbsp dried oregano

2 pinches black pepper

1 Tbsp olive oil (120)

Directions

1. Combine all the ingredients in a large bowl.

2. Mix everything by hand until it is well-mixed.

3. Use a cookie scoop to measure out even amounts of the meat mixture.

4. Roll the mixture into a ball.

5.  Place on a tray.

6.  Bake at 425º for 15 minutes.

Calories 52 each ball
