This week I ended up with buttermilk. How you might ask? Or even, why?

I had only heard of it before and was a bit hesitant about cooking with it so what better reason to try it out! As it turns out, it does not come in small quantities which left me with a lot of buttermilk to experiment with.
I managed to come up with some pretty tasty things. This week’s buttermilk treat was quiche! Super easy to make. It literally took me 10 minutes to throw together. The best part is you can change the content to pretty much whatever you want and it would still turn out amazing!
I started with 150 g of black forest ham . At the deli I asked them to cut 2 thick slices which I cubed. Any smoked meat would taste wonderful but black forest is pretty standard, good and easy on the pocket book.
I then added a small, sliced red onion. In the past I have used regular onion and also green onions. The red onion gave it a bit of a sweeter taste so if you don’t like that, stick to regular white onions. Once the onions were caramelized to my liking in a bit of olive oil, it was simply a matter of layering the ingredients.
Before pouring the egg mixture into a 9″ pre-made shells (who has the time to make pie shells from scratch?) layer all the ingredients. I used chives because I thought they would compliment the other ingredients but a sprinkle of dry parsley and/or oregano would be nice too. Finally top the quiche with cheddar. You can experiment with different cheeses. I like an aged white or orange cheddar because it has good flavour and salt.
Finally, beat the eggs and butter milk (regular cream will work too but won’t have the same tangy flavour) with a bit of salt and pepper. Pour this mixture over the ingredients and bake at 375º for about 45 minutes. This makes a filling meal when served with a side salad. It is healthy and easy to make. It also reheats well which is why the recipe makes 2. You guessed it! Breakfast the next day!
2 regular frozen pie shells
salt and pepper
3/4 C buttermilk
1 Tbsp chives
1 C mixed cheddar (grated)
2 thick slices ham, cubed (approx. 150 g)
1 small onion (caramelized)
1. In the frozen pie crusts layer the following:
caramelized onions, ham, chives, cheddar cheese
2. Mix eggs, salt and pepper, and buttermilk.
3. Pour the mixture evenly between the 2 pie shells.
4. Bake in a 375º oven for 45 minutes.
